What a day!
Today was one of those days that you look back at and don’t know how you managed to do, all you did.
Ever since I was a little girl, I’ve been baking.
So cute, right? I know!
That was my Monica from Friends impression if you didn’t catch it. My husband compares me to her all the time. From her obsession with cleaning and organizing to her occupation as a chef and previous fat girl.
Yeah, that’s me in a nutshell.
You see it now don’t you. I knew you would! A-Ha!
Anyway, I had gotten my usual weekly order of entrees from Mrs. K and was walking out the door to go grocery shopping when she called me back. She asked me if I’d be interested in making 6 dozen Vegan cupcakes for a series of exclusive events she was hosting. Of course, I say ABSOLUTELY!! Not really thinking about all the work that they alone would entail. Along with all the other orders to fill, two children and no real help. At this point panic sets in… BUT!! I decided to rebuke the devil! To ignore his best efforts of distraction, discouragement and doubt! To don my apron and get to work!
Can I get an amen??!
OK, First things first.
Beautiful golden vanilla cupcakes…
Yummy chocolate coconut…
I also baked chocolate mocha cupcakes and regular chocolate cupcakes, not pictured. Then the large task of making four different frosting’s began. I started with a huge batch of coconut-pecan frosting and it made the house smell amazing!
Then I went on to make mocha buttercream frosting, peanut buttercream frosting and coconut buttercream frosting! My oh my…
I was so happy with the way they all came out! I’m really starting to LOVE this whole cupcake thing! After taking an extremely brief moment to bask in my accomplishment I realize, I still had to fill Mrs. K’s weekly order! Yeah…
And eggrolls with Thai peanut sauce!
That was a doozey!
I really lived up to my name, “Baking Queen” today. It’s definitely a labor of love for me though. I couldn’t be happier. I’m so proud of everything I’ve made and so blessed to do what I love for a living.
